FARM MASH (400G)
4OZ GRATED CHEDDAR CHEESE
4 TBSP FRESH CHIVES
3x BACON RASHERS, CHOPPED (OPTIONAL)
6x EGGS

In a large bowl, mix Upper Dysart Farm Mash, cheese, 2 tablespoons of the chives, bacon and 1 egg with spoon until blended. Shape mixture into 1 inch balls.

Place breadcrumbs in a shallow bowl. In another shallow bowl, beat remaining 5 eggs. Coat potato balls with breadcrumbs, then dip into eggs and coat again with breadcrumbs.

In deep fryer or 3-quart heavy saucepan, heat 2 inches oil to 375°F. Fry potato balls, in batches, in hot oil 60-90 seconds or until golden brown. Drain on paper towels.

Serve warm potato bites with choice of dipping sauces — e.g. sour cream and chive
